Vietnamese Caramelized Catfish Fillets

 

Ingredients

  • 2 TBSP MCT oil

  • 2 TBSP sweetener+ 1 TBSP sugar if needed

  • 4 catfish filets

  • Splash of water to fish level

  • 2 TBSP minced garlic

  • 2-3 TBSP fish sauce

  • 1 TBSP dark soy sauce, option

 

Directions

  1. In a pan, combine 2 TBSP oil with 2 TBSP sugar. Caramelize this until it becomes a dark amber color, then add your catfish filets and cook both sides until the filet changes color.

  2. Add water so ½ of your fillet is covered along with 2 TBSP minced garlic and 2 TBSP fish sauce. Cover and cook for 10-15 minutes making sure to baste

  3. After 10-15 mins, taste test and adjust to preference. You will need to add some more sweetener. If you have dark soy sauce, then add that as well. Using a little bit of dark soy sauce will do nothing but add some color.

  4. Crank your heat to high and cook for 5 minutes. Your sauce will start to thicken up. Also-- if feeling brave, you can flip fish over once more.

  5. Top this off with scallion. Serve with cauliflower rice
