Middle Eastern Fusion Chicken Kabobs

 

Ingredients

  • 1 pound of Chicken Breast, cubed

  • ⅓ cup Plain Yogurt

  • 1 t Chili Powder or Paprika Powder

  • 1 t Cumin Powder(I grind mine)

  • 1 T Garam Masala

  • 1 t Turmeric Powder

  • 1 t Coriander Powder

  • 1 T Garlic Paste

  • 1 T Ginger Paste

  • 2 T Lemon Juice

  • Salt to Taste

  • Black Pepper to Taste

  • 1 T Neutral Oil

  • ½ c carrot, large chop

  • Bell pepper, large chop

  • ½ purple onion, large chop

  • Additions I like: Fenugreek Leaves, Cilantro Leaves, Curry Leaves, Desiccated Coconut

 

Directions

  1. Marinate the chicken for at least an hour (preferably overnight in the fridge) with the yogurt, seasonings, ginger, garlic, and lemon juice. Soak some bamboo skewers for at least 30 minutes.

  2. Preheat oven to 400 degrees.

  3. Place chicken cubes and vegetables on bamboo skewers alternating them (After soaking for 30 min)

  4. Cook in preheated oven at 400 degrees (or air fryer or grill) for 8-10 minutes, or until the chicken is charred. Flip halfway through and brush or spray some oil.

  5. I like to serve with Basmati Rice, Salad and Naan Bread
