Onion Bhaji (bah-gee)

Quick and easy Indian Street Food adapted from a recipe by Bobby Sharma, similar to an Onion fritter.

Ingredients

  • 2 large sweet onions

  • 1 tsp salt

  • 1 tsp turmeric

  • 1 tsp chili powder

  • 1 tsp cumin

  • 3/4 cup chickpea flower

  • 1 Tbsp baking powder

  • 1/4 cup cornstarch

  • 1/2 cup water

  • Oil for frying

Directions

  1. Thinly slice onions and add to a large bowl.

  2. Add all ingredients except water and oil to onions and mix thoroughly by hand. Mix until all flour is incorporated.

  3. Add water slowly until the desired consistency is reached.

  4. Heat oil 350 degrees. Use 2 spoons to press onion and batter together. Slowly place into oil. Do not overcrowd or the heat will drop and the bhajis will fall apart.

  5. After about 3 minutes the bottoms will be brown, turn over and finish cooking.

  6. Makes 10 bhajis
