Saucy Chicken Curry

 

Ingredients

  • 1 Tbsp Mustard Oil

  • 1 medium shallot, thinly sliced

  • 1/4 tsp curry powder

  • 1/4 tsp cumin

  • 1/4 black pepper

  • 1 large clove garlic, minced

  • 1/3 cup ketchup

  • 1/4 tsp chili or cayenne

  • salt, to taste

  • 2 chicken thighs, boneless & skinless

 

Directions

  1. Dice chicken into 1 inch cubes, set aside.

  2. Heat the oil on medium in a 12 inch skillet. Add the shallot, curry powder, cumin and black pepper. Cook and stir occasionally for 3 minutes. Add the garlic and continue stirring for about 1 minute.

  3. Add the ketchup, chili powder and a pinch of salt. Cook, stirring frequently, until thickened for about 2 minutes.

  4. Add the chicken and cook until at least 165 degrees.

  5. Serve with rice or flat bread.
