Saucy Chicken Curry
Ingredients
1 Tbsp Mustard Oil
1 medium shallot, thinly sliced
1/4 tsp curry powder
1/4 tsp cumin
1/4 black pepper
1 large clove garlic, minced
1/3 cup ketchup
1/4 tsp chili or cayenne
salt, to taste
2 chicken thighs, boneless & skinless
Directions
Dice chicken into 1 inch cubes, set aside.
Heat the oil on medium in a 12 inch skillet. Add the shallot, curry powder, cumin and black pepper. Cook and stir occasionally for 3 minutes. Add the garlic and continue stirring for about 1 minute.
Add the ketchup, chili powder and a pinch of salt. Cook, stirring frequently, until thickened for about 2 minutes.
Add the chicken and cook until at least 165 degrees.
Serve with rice or flat bread.
