Costillitas En Salsa Verde

 

Ingredients

For the meat

  • 1 ½ pork ribs

  • 1 clove of garlic

  • ¼ of white onion

  • 1 bay leaf

  • 2 cups of water

  • 2 tablespoons of vegetable oil or pork fat

  • Salt and pepper to taste

    For the salsa

  • 2 cloves of garlic

  • 8-10 tomatillos

  • ⅓ of white onion

  • 4 jalapeño peppers

  • ⅓ cup chopped cilantro

  • Salt and pepper to taste

 

Directions

  1. Cut the crosscut pork ribs into small pieces and place them in a saucepan to sear until golden brown.  Add 2 cups of water, ¼ of onion, a clove of garlic and the bay leaf. Bring it to a boil then reduce the heat to low. Cook for about 40 minutes until the meat is tender and the water has reduced.

  2. In the meantime, roast the tomatillos, the jalapeños, the 1⁄3 onion and 2 garlic cloves.  Remove onion and garlic quickly since they take less time to roast.

  3. Place the roasted vegetables and chopped cilantro in your blender and process until you have a mild sauce.

  4. After the meat has cooked for 40 mins, add the sauce to the pork. Season with salt and pepper and let it boil.  Cook on low for about 7-8 minutes.

  5. Serve your pork ribs in green sauce with rice and hot corn tortillas.
