Ingredients

  • 1 cup cottage cheese

  • 1 cup shredded mozzarella cheese

  • 1 cup tapioca flour

  • 3 eggs

  • 3 tablespoons melted butter

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning

  • 1 jar pasta sauce

  • 1 container mozzarella pearls

  • Shredded mozzarella cheese to top

 

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. Spray a 12-cup muffin tin with cooking spray.

  3. In a blender, combine the cottage cheese, shredded mozzarella cheese, tapioca flour, eggs, melted butter, garlic powder, and Italian seasoning. Blend until smooth.

  4. Pour the batter into the muffin tin, filling each cup halfway full.

  5. Add three mozzarella pearls to each cup.

  6. Top each cup with a tablespoon of pasta sauce.

  7. Sprinkle with shredded mozzarella cheese.

  8. Bake for 30 minutes, or until the pizza bites are golden brown and cooked through.

  9. Let cool slightly before serving.
