Poppy Seed Chicken

 

Ingredients

  • 2 chicken breasts

  • 1 carrot, cut

  • ½ onion, sliced

  • ½ tsp garlic powder

  • 1 can cream soup (chicken, mushroom, or celery)

  • 8 oz sour cream

  • ¼ white wine or substitute with chicken broth

  • 1 tsp poppy seeds

  • Olive oil, for cooking

  • 1 sleeve butter flavored crackers

  • 1 stick of butter

 

Directions

  1. Place oil in skillet. Warm it, then add chicken, veggies, and bay leaf. Sauté well. When chicken is done, cut into bite size pieces or shred.

  2. Preheat oven to 350°F. Mix chicken and veggies in a bowl with the sour cream, soup mix, wine, and poppy seeds. Once it's mixed well, place in greased baking dish.

  3. Crush the sleeve of butter flavored crackers. Melt 1 stick of butter in the microwave.

  4. Top casserole with crushed crackers and drizzle with melted butter. Place in a preheated oven and bake for 30 mins or until hot and bubbly.
