Buckeyes

 

Ingredients

  • 2 cups creamy peanut butter

  • ½ cup unsalted butter

  • 2 tbs light brown sugar

  • 1 ¼ tsp vanilla

  • 3 ¼ cup powdered sugar

  • 1 package almond bark

 

Directions

  1. Combine all the ingredients EXCEPT the almond bark in a bowl. Mix well until it is a thick dough

  2. Roll peanut butter dough into balls, stick a toothpick into each one and freeze for 15-20 min

  3. Open the almond bark and place in a microwave safe bowl. Microwave in 45 second increments, stirring in-between, until melted. To keep warm, bring a pot with a few inches of water to a low simmer that can fit the glass bowl on top (or use a double boiler)

  4. Dip ¾ of each ball into the almond chocolate and allow to cool.
