Buckeyes
Ingredients
2 cups creamy peanut butter
½ cup unsalted butter
2 tbs light brown sugar
1 ¼ tsp vanilla
3 ¼ cup powdered sugar
1 package almond bark
Directions
Combine all the ingredients EXCEPT the almond bark in a bowl. Mix well until it is a thick dough
Roll peanut butter dough into balls, stick a toothpick into each one and freeze for 15-20 min
Open the almond bark and place in a microwave safe bowl. Microwave in 45 second increments, stirring in-between, until melted. To keep warm, bring a pot with a few inches of water to a low simmer that can fit the glass bowl on top (or use a double boiler)
Dip ¾ of each ball into the almond chocolate and allow to cool.
