Italian Cornflake Crusted Chicken

Italian Cornflake Crusted Chicken

Ingredients:

  • 1 Chicken Breast, Butterflied & Filleted 

  • 3 C. Cornflakes

  • 1 Slice of White Bread

  • 3 TBSPS Salted Italian Seasoning

  • 1/4 TSP Cayenne Pepper

  • 1/2 TSP Black Pepper

  • 1 TSP Oregano

  • 1 TBSP Yellow Mustard

  • 1 C. Mayonnaise 

Recipe:

  1. Preheat oven to 385F and prepare chicken. Once chicken breast is cut up, set to the side and in a food processor add the cornflakes, bread, and seasoning and process well into a breadcrumb form. 

  2. In another bowl mix the mayonnaise and mustard together. Place chicken in the mayonnaise and mustard and coat well. 

  3. Spray a oven sage wire Rick with non stick spray and place over the sink. Then place one chicken at a time into the breadcrumb mixture until we’ll coated. Also press chicken into the. Reading for a better crust. Gently transfer to the wire rack. 

  4. Repeat until no more chicken. Place in until for 25 minutes. Take out and flip and cook another 20 minutes. For a crispier topping, broil for 5-10 minutes each side. 

  5. Take out of the oven and let rest ten minutes and serve!
