Adult Franks & Beans
This recipe uses sausages traditionally - but since I had hotdogs to use and some “precooked bacon in the cabinet - that’s what I went with I got creative for Day 4 of the Food Pantry Challenge
You can be pretty flexible with the beans, the vegetables. I have made this with tofu as well.
Adult Franks & Beans
Ingredients:
1 tablespoon olive oil
1 pound precooked shelf stable bacon, chopped
3 of Hotdogs ( you can use up to a package as well)
¼ cup beef stock
2 cups cooked rice (or pasta)
2 - 14 oz can of beans (I used pinto and garbanzo), drained.
1/2 green pepper (diced)
1 small onions (chopped)
1 - 14 oz can crushed tomatoes w/ juice
2 bay leaves
salt (to taste)
black pepper (to taste)
1 tsp red pepper flakes
Preparation:
Heat the oil in a shallow, flameproof casserole or heavy-based saucepan that comes with a lid, and brown the bacon, then add the hot dogs
When the bacon is crisp remove from the pan, do the same when the hotdogs are cooked
Take the pan off the heat for a moment, and pour in the stock, then add the onions, peppers, tomatoes and the drained beans
Bring to a simmer and add the seasonings and bay leaves. You can add up to an additional cup of water or stock if you need more liquid.
Bring to a bubble, then turn the heat down to low, cover and let it simmer for 10 minutes.
Remove the lid, turn up the heat a bit and simmer robustly for 5 further minutes until the sauce has thickened slightly.
Add the hotdogs back, add the rice. Mix well, add the bacon and serve
