Old-Fashioned Fruit Cocktail Cake

Our own @sherry_skinner , another of the @FoodtokTV creators dropped by for a webchat tonight and shared this favorite. So I get to share it with all of you!

“This fruit cocktail cake is literally the first cake I ever made. My mother handed me a cookbook, which I still have to this day, with the ingredients and told me to follow the recipe. She had already shown me how to measure with measuring cups and measuring spoons and taught me that tsp. was teaspoon, etc. She pointed out the difference between cooking oil and shortening and how to grease and flour a pan to make a cake release, I was very fortunate she trusted me enough to just turn me loose in the kitchen. There is always a learning curve, but baking has always been my favorite thing to do, thanks to my mother!”

Old-Fashioned Fruit Cocktail Cake

Ingredients:

  • 15 oz can of fruit cocktail

  • 2 eggs

  • ½ c. Crisco oil

  • 1 tsp. vanilla

  • 2 c. flour

  • 1½ c. sugar

  • 2 tsp. baking soda

  • ½ tsp. salt

Icing

  • 1½ c. sugar

  • 1½ sticks of butter

  • 1 c. evaporated milk

  • ½ c. chopped pecans

  • ½ c. flaked coconut


Preparation:

Cake:

  1. In a large bowl, mix together with a large spoon the fruit cocktail, 2 eggs, the Crisco oil and vanilla.

  2. Sift in the flour, sugar, baking soda, and salt. Stir gently to maintain the integrity of the fruit.

  3. Mix together and put in a greased 9X13 cake pan.

  4. Bake a 350º for around 45 minutes or until golden brown.

Icing:

  1. Mix in a pan the sugar, butter, and evaporated milk and boil until thick and creamy. Then add the pecans and coconut.

  2. Stir and pour over the cake when the icing is warm (not hot).
