Chicken Feta Pasta Recipe

Baked feta and cherry tomatoes, balsamic, fresh parmesan cheese, and pasta, you know it's so good!

Octoberdragonfly made a baked feta and cherry tomato pasta with fresh basil. It's such a delicious weeknight meal, you know it's so good!
 

Ingredients

  • One block of feta cheese

  • 12 oz cherry tomatoes

  • 1 tbsp Italian seasoning or Italian style Sofrito

  • 2 cloves sliced garlic

  • ¼ cup basil

  • 1 shallot, chopped

  • Salt and pepper

  • 2-3 tbsp Olive oil

  • Balsamic vinegar

  • One to two cooked chicken breasts

  • 1 pound of cooked and drained pasta of choice (we love using tricolored rotini)

  • Grated Parmesan cheese

 

Directions

  1. In an 8 x 8 casserole dish, add olive oil, then the block of feta cheese to the center. Then add cherry tomatoes, shallots, garlic, and Italian seasoning and top with more olive oil. Put into a 400° oven for 20 minutes until tomatoes are soft and cheese is melted.

  2. While all your feta mixture is in the oven, cook your pasta until al dente also warm your chicken or cook your chicken if it’s fresh.

  3. When the feta and tomatoes are done, remove the pan from the oven and stir everything together until the tomatoes and feta make a creamy sauce. Add pasta and chicken and stir until everything is well coated. You can add a bit of pasta water if the mixture seems too thick.

  4. Stir in some chopped basil. Top everything with freshly grated Parmesan cheese to taste.
