Thanksgiving Leftover Balls

This is a great appetizer to serve with Thanksgiving leftovers! Mashed potatoes, stuffing, turkey, and cheese is balled up, battered, and fried. Try it with cranberry barbecue sauce!
 

Ingredients

  • Leftover mashed potatoes

  • Leftover stuffing

  • Leftover turkey, chopped

  • Green onions, chopped

  • Shredded cheese (your favorite kind)

  • All purpose flour

  • 2-4 Eggs

  • Panko bread crumbs

  • Salt and pepper to taste

  • Oil for frying

 

Directions

  1. In a large bowl, combine the mashed potatoes, stuffing, turkey, green onions, and cheese. Season with salt and pepper. Form this mixture into small balls.

  2. Set up an assembly line that includes three bowls lined in a row. Fill the first bowl with flour, the second bowl with the lightly beaten egg and the third bowl with panko bread crumbs.

  3. Dip each ball in the floor, then in the beaten egg, then roll in the panko bread crumbs until fully coated.

  4. Heat the oil in a large skillet over medium heat.

  5. Fry the balls until golden brown and crispy on all sides.

  6. Drain on paper towels and serve warm with this cranberry barbecue sauce
