My take on a Chocolate Peanut Butter “Impossible” Pie

I’m a big fan of using baking mixes as a quick hack when making Bisquick brand is one I have grown up with and use most, with Jiffy brand being a second. I came across this recipe while trying to figure out a way to use up some Bisquick and figured I would give it a try and fell in love. I guess the idea of it being impossible is how the magic happens with so little baking mix being used and it sets up its own crust while also being creamy, rich, and gooey. The best way to describe the taste and texture is a “thruple of love”; the marriage of a brownie, cake, and souffle’. Not only is it easy.. It takes less than 20 min to prepare without needing to use any fancy equipment, bakes in 25-30 min, and most importantly, it is ready to be served within an hour or so depending on your preference. perfectly paired with whipped cream or ice cream, just as is. The version that started my love of this pie comes from the blog Architecture of a Mom.

Chocolate Peanut Butter Impossible Pie

Ingredients 

  • 2 eggs

  • 1 cup milk

  • 1 tsp vanilla extract

  • 2/3 cup peanut butter ( Creamy or Chunky - your call)

  • 1/4 cup unsalted butter, softened

  • 1 cup brown sugar, packed

  • 4 tablespoons cocoa powder 

  • 1/2 cup Bisquick

Preparation

  1. Preheat the oven 350 degrees F. 

  2. To a bowl whisk together butter, brown sugar, eggs, and peanut butter until almost smooth

  3. Sift and add the cocoa powder and Bisquick to the bowl and mix until well blended (You can do this by hand well enough or using a hand mixer on medium for about 1 minute)

  4. Use cooking spray or a butter wrapper to grease a pie dish well. 

  5. Pour mixture into the prepared pie dish and bake for 27 minutes. DO NOT OPEN THE OVEN YET

  6. Turn the oven off and leave it in the oven for another 5 minutes. If it feels too jiggly in the center - put it back in the off oven for another 4-5 min.

  7. Then remove and allow to cool. You can serve this warm after about 40 min (unless you jsut can’t wait :)

Serve plain or with whipped cream or ice cream and a sprinkling of chopped peanuts. 

Substitutions:

You can substitute some of the milk with strong cold coffee to intensify the flavor of chocolate

You can use other nut butter, or nondairy milks and substitute almond extract in for the Vanilla if you like a strong almond flavor. Gluten-free baking mixes also work well with this recipe.
