Ingredients
1 onion, chopped
1 Tbsp vegetable oil
1/3c raisins
2 Tbsp chili powder
2 Tbsp Unsweetened coco powder
salt/pepper
1&1/2c low-sodium chicked broth
1 (14.5oz) can of diced tomatoes
2 Tbsp peanut Butter
4 boneless skinless chicken breasts (6-8oz each)
1/4c cilantro , minced
Directions
Microwave onion, oil, raisins, chili powder, cocoa powder and 1/2 tsp salt in a bowl, stirring occasionally, until onion is softened, about 3 minutes. Then take onion mixture, broth, tomatoes, and peanut butter and blend or process until smooth. Transfer to a 12” skillet.
Season chicken with salt and pepper, then add to skillet. bring to simmer and cover until chicken is cooked and sauce is slightly thickened, about 15 minutes. Sprinkle with cilantro and serve.
