Monterey Chicken

 

Ingredients

  • 8 slices of bacon

  • 4 chicken breasts

  • To taste, salt, pepper, onion powder, garlic powder

  • 3 tablespoons of Worcestershire sauce

  • 3 tablespoons of honey

  • 3 tablespoons of soy sauce

  • 4 garlic cloves minced

  • 4 tablespoons of barbecue sauce

  • 1 cup of cheddar cheese or any cheese of your choice

  • 3 green onions

  • 1 diced tomato

Directions

  1. Fry bacon until crispy. Remove and keep remaining fat in skillet and crumble. 

  2. Meanwhile, pound chicken to about equal thickness or butterfly. Season with whatever seasonings you choose. 

  3. Place chicken and bacon fat in skillet and brown. 

    Add Worcestershire sauce, honey, soy sauce, and garlic. Let chicken simmer in sauce until done. 

  4. Place on ovenproof pan or an ovenproof vessel. 

    Top with barbecue sauce and cheese. Broil until melted. Remove and garnish with green onion and tomato.
