Vegetable Couscous

 

Ingredients

  • 2 cups of couscous

  • 1 tablespoon of extra virgin olive oil or butter or a combination

  • 1 clove of minced garlic

  • ½ cup of frozen veggies, thawed and drained

  • 2 ½ cups of water or chicken stock

  • Salt and pepper to taste, and may add any seasonings that you would like.

 

Directions

  1. In medium saucepan with lid, combine water, extra virgin olive oil or butter, and seasonings. Bring to a boil.

  2. - Remove from heat and quickly stir until all couscous has been covered in water and replace lid immediately.

  3. - Let sit 5 minutes covered, undisturbed.

  4. - Fluff with fork and serve.
