Mexican Shrimp Cocktail (Cóctel de Camarón)
A zesty, refreshing seafood classic that brings bold flavor to any table—perfect for holidays or hot summer days!
Ingredients
⅓ cup chopped Spanish onion
¼ cup fresh lime juice
1 lb cooked medium shrimp (peeled, deveined, tails off)
2 roma tomatoes, chopped
1 cucumber, finely chopped
1 jalapeño, seeded and minced
½ cup fresh pineapple, diced small
2 tsp salt
2 tsp black pepper
1 ½ cups chilled tomato-clam juice (like Clamato)
1 cup chilled ketchup
½ cup Orange Fanta
1 bunch cilantro (leaves chopped, stems removed)
2 tbsp hot sauce (or to taste)
2 ripe avocados, diced
Directions
Toss the chopped onion with lime juice in a bowl and let it sit 5–10 minutes to soften the sharpness.
Add shrimp, tomatoes, cucumber, pineapple, and jalapeño. Season with salt and pepper.
Stir in the tomato-clam juice, ketchup and orange Fanta until everything is well coated.
Mix in chopped cilantro and hot sauce.
Gently fold in the avocado right before serving.
Chill for 30 minutes or serve immediately for a bold, tangy bite!
