Meatloaf with Tomato Gravy

 

Ingredients

Meatloaf

  • 1 pound 80/20 Ground Beef

  • ½ packet Meatloaf seasoning

  • 1 teaspoon dry Minced Onion

  • ¼ chopped Bell Pepper

  • 1 Egg

  • 1 can Rotel, reserve juice

  • 1 splash Milk

  • 1 sleeve Saltine Crackers

  • Salt & Pepper

    Sauce on top

  • Ketchup

  • Worcestershire sauce

  • Texas Pete hot sauce

  • Soy Sauce

  • Bacon pieces

    Tomato Gravy

  • 2 teaspoons Bacon Grease

  • 2 teaspoons Flour

  • 8 ounces Tomato Sauce

  • dry minced Onion

  • Minced Garlic

  • Salt & Pepper

  • Splash Texas Pete hot sauce

  • Some Rotel juice (reserved from meatloaf)

  • Hot water

 

Directions

  1. Mix all meatloaf ingredients together until well combined

  2. Spray loaf pan, put 2 pieces of bread on bottom of loaf pan. Pour meat mixture into and compress in pan

  3. Combine ingredients for the sauce on top. Top the meatloaf with sauce blend and bacon pieces and cook until pulling away from the edges (typically 45 min to 60 min)

  4. In a skillet on medium heat, combine the bacon grease and flour. Cook a few minutes, then add tomato sauce and the rest of the gravy ingredients. Add hot water slowly to thin it out. Let simmer s few minutes and serve on meatloaf.
