Margherita Stuffed Chicken

 

Ingredients

  • Chicken Breasts, butterflied

  • Tomato Slices

  • Mozzarella Cheese

  • Basil

  • Flour

  • Italian breadcrumbs

  • Salt, pepper, garlic powder, onion powder, to taste

  • Crushed red pepper

  • Eggs

  • Milk

  • Extra virgin olive oil

  • 2 Tbsp butter

  • Toothpick Ends

 

Directions

  1. Season the flour in one bowl. Combine milk and eggs in a separate bowl, and put breadcrumbs in a 3rd bowl.

  2. Dredge chicken in seasoned flour,then dip in egg and milk, then into the Italian bread crumbs 

  3. Stuff with fresh basil, tomato and cheese

  4. Fold chicken and use toothpicks to keep together.

  5. Heat a skillet on medium heat. Sauté chicken. in EVOO and butter. Shallow fry until done

  6. Place on wire rack for 15 minutes after cooking to set
