Lemon Pepper Chicken Skewers

Ingredients
1 large boneless, skinless chicken breast, cut into 1-inch pieces
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 tablespoon minced or grated garlic
1 tablespoon lemon zest
¼ teaspoon paprika
1 tablespoon olive oil
For the Lemon Pepper Butter:
½ stick (4 tablespoons) unsalted butter, partially melted
1 teaspoon freshly ground black pepper
½ teaspoon salt
1 tablespoon lemon zest
¼ teaspoon paprika
¼ teaspoon sugar
2 tablespoons lemon juice
Directions
In a large bowl, combine the chicken breast pieces with salt, black pepper, minced garlic, lemon zest, paprika, and olive oil. Toss until all the chicken is evenly coated.
Thread the chicken pieces onto skewers, keeping them snug but not overcrowded.
Preheat the air fryer to 400°F (200°C). Arrange the chicken skewers in a single layer in the air fryer basket without overlapping. Cook for 12 minutes at 400°F. Flip the skewers and cook for an additional 8-10 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
While the chicken is cooking, mix the partially melted butter with black pepper, salt, lemon zest, paprika, sugar, and lemon juice until smooth.
Remove the cooked chicken skewers from the air fryer and immediately brush them generously with the lemon pepper butter.
