Ingredients

  • ½ cup butter (softened)

  • 1 cup sugar

  • 4 eggs

  • 1 can crushed pineapple

  • 2 tablespoons pineapple juice Optional: substitute coconut milk

  • 5 slices white bread, cubed

  • Optional: ¼ cup golden raisins

 

Directions

  1. Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish.

  2. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.

  3. Beat in the eggs, one at a time, ensuring each is well incorporated. Stir in the crushed pineapple along with 2 tablespoons of the reserved pineapple juice until evenly mixed.

  4. Gently fold the bread cubes into the pineapple mixture, ensuring the bread is fully coated.

  5. Pour the mixture into the prepared baking dish and spread it evenly. Bake for 45-50 minutes, or until the top is golden and the pudding is set.

    Serve with whipped cream or a drizzle of caramel sauce for extra indulgence.
