Homemade Buttermilk Pancakes

 

Ingredients

  • 4 tbs butter (melted)

  • 2 cups all purpose flour

  • 3 tbs sugar

  • 2 tsp baking powder

  • ½ tsp baking soda

  • 2¼ cup buttermilk

  • 2 large room temp eggs (lightly beaten)

  • 1 ½ tsp vanilla

 

Directions

  1. Melt butter and set aside to allow to cool while mixing dry ingredients. Whisk together flour, baking powder, baking soda, sugar until well combined.

  2. In a different bowl, combine eggs, vanilla and buttermilk and whisk together until well combined. Slowly add in cooled melted butter into wet ingredients. It may curd up a little, but this is ok. Just keep whisking until well combined.

  3. Add wet ingredients to dry Ingredients and gentle combine. You want to still see a few streaks and small chunks of flour. If you over mix the batter, it will make your pancakes flat.

  4. Spray a nonstick pan with your choice of cooking spray. Over medium heat, allow the skillet to preheat for about 5 or 6 minutes to allow the skillet to be warm enough. You also want to make sure your batter has a few minutes to sit while you preheat.

  5. Use roughly 2/3 cup of batter into the skillet. Allow the pancake to cook until the edges become to look cooked and the bubbles on top are beginning to pop. Flip the pancake over and continue cooking until golden brown.

    Continue spraying between each pancake.
