Gluten Free Mediterranean Pasta Salad
Ingredients
1 cup of sundried tomatoes chopped
2 cups of goat cheese or feta
1 box gluten free pasta of choice
1 cup of chopped caned artichoke hearts
1 lb Olive oil Grilled chicken
1 box of pasta of choice I use gluten free
Salt
Pepper
Basil
Parsley
1 1/2 cup of spinach Olives (optional)
Directions
Boil and drain the pasta .
Chop artichoke and add
Chop up chicken and add
Chop 1 1/2 cup spinach and add
Chop 1 cup of olives
Salt and pepper to taste
Chop fresh basil and parsley and add amount of choice
Olive oil add desired amount
Mix in feta or goat cheese
