Gluten Free Mediterranean Pasta Salad

 

Ingredients

  • 1 cup of sundried tomatoes chopped

  • 2 cups of goat cheese or feta

  • 1 box gluten free pasta of choice

  • 1 cup of chopped caned artichoke hearts

  • 1 lb Olive oil Grilled chicken

  • 1 box of pasta of choice I use gluten free

  • Salt

  • Pepper

  • Basil

  • Parsley

  • 1 1/2 cup of spinach Olives (optional)

 

Directions

  1. Boil and drain the pasta .

  2. Chop artichoke and add

  3. Chop up chicken and add

  4. Chop 1 1/2 cup spinach and add

  5. Chop 1 cup of olives

  6. Salt and pepper to taste

  7. Chop fresh basil and parsley and add amount of choice

  8. Olive oil add desired amount

  9. Mix in feta or goat cheese
