Focaccia Cluck Sandwich

This Focaccia Cluck Sandwich delivers an explosion of flavor and texture that will redefine your lunchtime expectations. Imagine tender, perfectly seasoned chicken nestled between slices of warm, airy focaccia, layered with creamy melted cheese, vibrant greens, and a burst of pesto goodness.

 

Ingredients

  • 2 boneless, skinless chicken breasts

  • 4 slices of focaccia bread

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • Salt and black pepper to taste

  • 4 slices of mozzarella or provolone cheese

  • ½ cup fresh arugula or spinach

  • ¼ cup sun-dried tomatoes (optional)

  • 4 tablespoons pesto sauce (store-bought or homemade)

 

Directions

  1. Prepare the Chicken: Slice the chicken breasts horizontally to create thinner fillets, or pound them evenly for quicker cooking. Rub the chicken with olive oil, garlic powder, smoked paprika, salt, and pepper.

  2. Grill the Chicken: Heat a grill or grill pan over medium-high heat. Cook the chicken fillets for about 4-5 minutes per side, or until cooked through and the internal temperature reaches 165°F (75°C). Set aside to rest.

  3. Toast the Focaccia: Lightly toast the focaccia bread slices on the grill or in a skillet to warm them up and add a slight crunch.

  4. Assemble the Sandwich: Spread a layer of pesto sauce on the bottom slice of each piece of focaccia. Layer with grilled chicken, a slice of cheese, sun-dried tomatoes (if using), and fresh arugula or spinach. Top with the other slice of focaccia.
