Creamy Balsamic Vinaigrette

Ingredients
½ cup balsamic vinegar
¼ cup mayonnaise (for creaminess)
2 tablespoons Dijon mustard
1 garlic clove, minced or grated
1 tablespoon honey
½ teaspoon salt
¼ teaspoon black pepper
¾ cup olive oil
Directions
In a medium bowl, combine oil, balsamic vinegar, mayonnaise, Dijon mustard, minced garlic, honey, salt, and pepper. With an immersion blender, blend until the dressing is a creamy texture.
If the dressing is too thick for your liking, add a teaspoon of water at a time until the desired consistency is reached.
Taste the dressing and adjust the seasoning, adding more salt, pepper, or sweetener if needed.
Transfer the vinaigrette to a jar or airtight container. It can be stored in the refrigerator for up to one week. Shake or whisk before serving, as it may separate over time.
