Creamy Balsamic Vinaigrette

This creamy balsamic vinaigrette is perfect for salads, roasted vegetables, or as a marinade for chicken or steak. Enjoy!

Ingredients

  • ½ cup balsamic vinegar

  • ¼ cup mayonnaise (for creaminess)

  • 2 tablespoons Dijon mustard

  • 1 garlic clove, minced or grated

  • 1 tablespoon honey

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¾ cup olive oil

Directions

  1. In a medium bowl, combine oil, balsamic vinegar, mayonnaise, Dijon mustard, minced garlic, honey, salt, and pepper. With an immersion blender, blend until the dressing is a creamy texture.

    If the dressing is too thick for your liking, add a teaspoon of water at a time until the desired consistency is reached.

  2. Taste the dressing and adjust the seasoning, adding more salt, pepper, or sweetener if needed.

  3. Transfer the vinaigrette to a jar or airtight container. It can be stored in the refrigerator for up to one week. Shake or whisk before serving, as it may separate over time.
