Cottage Cheese Breakfast Tacos

 

Ingredients

  • 150g cottage cheese

  • 2 medium eggs

  • 1 beef bacon

  • ¼ cup spinach

  • ¼ tomato into 2 slices

  • 2 tbsp pickles

  • Coriander

  • Pinch of Greek seasoning

 

Directions

  1. Preheat oven to 180 degrees celsius/ 350 degrees Fahrenheit

  2. Line a baking tray and make two even circles with the cottage cheese

  3. Place in the oven for 10 mins and then remove and wipe up excess water with a paper towel. Use a spatula to push the cottage cheese back into a circular shape. Bake for another 10 minutes

  4. Meanwhile, scramble the eggs and cook the bacon

  5. Once the cottage cheese “tortillas” are ready, peel off the baking paper and assemble with the spinach, eggs, tomato, bacon, pickles, coriander and Greek mingle seasoning
