Chicken Saltimbocca Roll-Ups

Ingredients
2 boneless, skinless chicken breasts
8 fresh sage leaves
4 slices provolone cheese
4 thin slices prosciutto or deli ham
Flour, for dredging
Olive oil, for frying

Directions
Slice each chicken breast in half lengthwise, then again if large—aim for 4 thin pieces total.
Pound each piece under plastic wrap until about ¼ inch thick.
Layer each cutlet with 1 sage leaf, 1 slice of provolone, and 1 slice of ham.
Roll tightly and secure with 1–2 toothpicks.
Dredge lightly in flour, shaking off excess.
