Chicken Saltimbocca Roll-Ups

These Chicken Saltimbocca Roll-Ups are a savory twist on the Italian classic, featuring juicy chicken, melted provolone, prosciutto, and fresh sage. Pan-fried to golden perfection, this quick and flavorful dinner is perfect for weeknights or date night at home.

 

Ingredients

  • 2 boneless, skinless chicken breasts

  • 8 fresh sage leaves

  • 4 slices provolone cheese

  • 4 thin slices prosciutto or deli ham

  • Flour, for dredging

  • Olive oil, for frying

  • Toothpicks

 

Directions

  1. Slice each chicken breast in half lengthwise, then again if large—aim for 4 thin pieces total.

  2. Pound each piece under plastic wrap until about ¼ inch thick.

  3. Layer each cutlet with 1 sage leaf, 1 slice of provolone, and 1 slice of ham.

  4. Roll tightly and secure with 1–2 toothpicks.

  5. Dredge lightly in flour, shaking off excess.

  6. Heat oil in a skillet over medium-high. Fry roll-ups seam-side down until golden on all sides and cooked through, about 6–8 minutes total.remove toothpicks
