Bacon-Wrapped Goat Cheese–Stuffed Dates

These Bacon-Wrapped Goat Cheese–Stuffed Dates are the ultimate sweet and savory appetizer, perfect for parties or holiday platters. Filled with creamy goat cheese and wrapped in crispy bacon, they’re easy to make and always a crowd favorite.

 

Ingredients

  • 16 Medjool dates, pitted

  • 4 oz goat cheese (or use blue cheese or whipped feta)

  • 8 slices of bacon, cut in half

  • Toothpicks

  • Optional: crushed pistachios or a sprinkle of smoked paprika

 

Directions

  1. Preheat oven to 350°F.

  2. Partially cook the bacon: Lay bacon halves on a baking sheet and bake for 10 minutes. Let cool slightly so they’re easy to handle but still pliable.

  3. Slice dates lengthwise (not all the way through) and remove pits if needed. Stuff each date with about 1 teaspoon of goat cheese. Wrap each stuffed date with a half-slice of partially cooked bacon and secure with a toothpick.

  4. Bake for another 10 minutes at 350°F, until bacon is crisp
