Chicken, Potato and Onions with a surprise

Bringing us his content from San Francisco, Frank aka @Frank_mentorsf shares his first meal of the Food Pantry Challenge with an unusual combination of frosted flakes, onions, chicken and potatoes. Yes I said “Frosted Flakes”. Because I didn’t have bread crumbs and it was day one and didn’t want to use up my white bread. I needed something to give the dish some texture and thought the crushed cereal would work.. it did! It may not be the most exciting looking - but it fills the belly and can feed 3 adults for a dinner and with leftover the next day

Ingredients

  • 2 onions

  • 3-4 small potatoes

  • 1 cup of flaked cereal (or bread crumbs)

  • 1 lb chicken breast (or thighs without skin)

  • Parsley

  • Red pepper flakes to taste 

  • S

    alt and pepper to taste

  • Dried parsley

  • B

    utter

  • Oil (your preference)

  • Hot sauce (optional)

Preparation

Part 1

  1. Thinly slice the onions

  2. Wash, dry, then slice the potatoes 

  3. Add corn oil to a non stick skillet on medium heat and add onions 

  4. Cover the potatoes in plastic wrap and microwave with  2 tablespoons of water and some butter, 2-3 minutes until fork tender. 

  5. When done add to the pan. Stir as needed

  6. Session with Salt and pepper

Part 2

  1. While the onions and potatoes cook

  2. Take chicken, pat dry and cut into pieces, season with salt and pepper

  3. Add other spices to your taste. Set aside.

  4. Add you cereal to a plastic bag and crush.

  5. Add dried parsley, red pepper flakes, salt, pepper and shake.

  6. Make an egg wash with one egg and splash of milk. Wisk up.

  7. Dip the chicken into to wash them roll in the crushed cereal

Putting it all together

  1. CHECK THE POTATOES AND ONIONS!

  2. Preheat the oven to 350 degrees

  3. While watching the onions and potatoes (reduce heat or add oil if needed) 

  4. Place chicken on a medium-hot skillet cooking 2 - 3 min a side until they start to brown and crisp. And chicken becomes white.

  5. When cooked on both sides (it will be not fully cooked), add the pieces to the pan of onions and potatoes

  6. When all the chicken is precooked and covers the onions and potatoes, top with a drizzle of oil, several pats of butter

  7. Place in the oven, uncovered and cook for another 10-15 min or until the thickest piece of chicken reads 165 degrees. Stir as needed to blend. 

  8. While it finishes cooking, dice up basil or other fresh herbs, tomatoes or other fresh veggies to use for a garnish and to add some extra freshness. 

  9. Once pulled out of the oven, add to a bowl and top with fresh basil, green onions, tomatoes and serve.

    Notes:

    • Because of the sugar in the flakes - you will want to watch it doesn’t burn.

    • I tend add some some hot sauce as well.

    • A squirt of lemon or lime immediately out of the oven works as well .

    • You can also use this as a filling for tortilla or rolls and top with cheese
