Breakfast Nachos

Red Wagon Bakery's breakfast nachos are made with homemade flour tortilla chips, then loaded with bacon, sausage, scrambled eggs, and cheese
 

Ingredients

  • 1 lb of bacon

  • 1 lb mild pork sausage

  • 8 eggs

  • ½ cup heavy whipping cream

  • 1 package of medium flour tortillas

  • 1 can mild cheddar cheese

  • ¾ cup mild green verde sauce

  • 1 package shredded Mexican cheese (size depends on preference)

  • 1 tomato

 

Directions

  1. Brush your choice of oil (we used vegetable oil) over front and back of each tortilla shell and cut into triangles. Place them on a large baking sheet and sprinkle with course salt. Bake at 350 degrees for 10-12 minutes or until golden brown.

  2. Meanwhile, brown sausage in skillet over medium heat. Cook bacon in skillet over medium heat.

  3. Add ½ cup heavy whipping cream into 8 cracked eggs and whisk together. Scramble in a pan over medium heat.

  4. Cut bacon into smaller pieces.

  5. Once everything is cooked layer on to the pan on top of the chips. Layer sausage, then bacon, then the eggs. Spread your mild cheddar cheese over the top. Sprinkle your shredded cheese over top of the cheddar.

  6. Broil on low for 5-7 minutes. Keep an eye on it to make sure it doesn't burn.

  7. Once you pull it out, top with your diced tomatoes and enjoy!
