Taylor’s Sweet Potato Fries
Ingredients
2 large or 3 medium sweet potatoes (~2 lbs)
1-3 Tbsp cajun seasoning
2 Tbsp oil (to coat sweet potatoes, more or less)
1/2 Tbsp salt (if not in seasoning blend)
1 Tbsp corn starch
Directions
Preheat oven to 425 Peel sweet potatoes and cut into thin 1/4 inch strips (thinner cuts = crispier!).
Toss with the remaining ingredients. Place in two glass 9×13's, not crowded, and bake 15 minutes.
Remove, flip the fries, and bake another 7-10 minutes.
Allow to rest 3 minutes before enjoying.
