Southwest Pasta Salad

 

Ingredients

  • 8 oz short pasta (I'm usinc ditalini)

  • 1 can black beans, drained and rinsed

  • 2 corns on the cob or 1 cup corn, canned or frozen

  • 4 small sweet peppers or 1 bell pepper, diced

  • 1 cup cherry tomatoes, halved

  • ½ of a red onion, diced

  • ¼ cup chopped cilantro

  • 1 avocado, diced

  • Chipotle vinaigrette

  • Feta or cotija cheese for garnish

 

Directions

Combine all ingredients and toss with dressing.

This lasts in the refrigerator for 5 days, but leave out the avocado until serving.
