Southwest Pasta Salad
Ingredients
8 oz short pasta (I'm usinc ditalini)
1 can black beans, drained and rinsed
2 corns on the cob or 1 cup corn, canned or frozen
4 small sweet peppers or 1 bell pepper, diced
1 cup cherry tomatoes, halved
½ of a red onion, diced
¼ cup chopped cilantro
1 avocado, diced
Chipotle vinaigrette
Feta or cotija cheese for garnish
Directions
Combine all ingredients and toss with dressing.
This lasts in the refrigerator for 5 days, but leave out the avocado until serving.
