Chipotle Vinaigrette CopyCat

 

Ingredients

  • ½ cup neutral oil

  • ¼ cup red wine vinegar

  • 2 Tbsp honey

  • 2-3 chipotles in adobo sauce

  • 1 tsp adobo

  • ½ Tbsp salt

  • ½ tsp black pepper

  • ¼ tsp dried oregano

  • Splash lime juice (chipotle doesn't do that, but it's better)

 

Directions

  1. To a blender or food processor, add red wine vinegar, honey, chipotles, adobo, and salt. Blend until it's a puree.

  2. While the machinw is processing, slowly drip in the oil for it to emulsify.

  3. Once emulsified and thick, add the pepper and oregano.

  4. Taste and adjust the flavors. Add lime juice to taste. Store in the fridge up to 5 days.
