Shrimp with Tomatoes and Orzo

On our recent Sunday night Live, Caz did this super tasty dish


Ingredients:
2 Tbsp extra virgon olive oil,

plus 1 tsp oil separated
6 garlic cloves, minced
3c grape tomatoes, halved
3/4 lb Orzo
3 1/4c low-sodium broth
1lb large shrimp, preeled and deveined
1c fresh basil leaves
1 packet Sazon Goya (pictued right)

Instructions:

  1. Preheat oven to 400 degrees, with the rack in the top position.

  2. In a large skillet with a tight fitting lid heat 3 Tbsp of oil over medium heat. Add garlic and saute until just beginning to brown.

  3. Increase heat to high and add tomato. Season with salt and pepper. Cook until softened, stirring occasionally, about 6 minutes

  4. Add Sazon, broth and orzo and bring to a simmer. Cover and bake until liquid is mostly absorbed, 10-12 minutes.

  5. Toss shrimp with remaining teaaspoon oil and 1/4 tsp each salt and pepper. Remove skillet from oven and place shrimp on top of orzo. Heat broiler. Broiler until shrimp are opaque throughout, about 4 minutes. Sprinkle with basil and serve.
