Shrimp & Sausage (Low Country) Boil
Ingredients
1 ear corn
5-6 new potatoes
1/2 lb shrimp
6 oz andouille sausage
2 c water
1 Tbsp hot sauce
1 Tbsp Old Bay seasoning
1 tsp onion extract or 1/4 onion puree
1/4 tsp creole seasoning
Directions
Here's how to do it in three easy steps:
Fill a skillet with 2c water and bring it to a boil. Add the Old Bay, hot sauce and onion extract and stir well. This will give your boil a nice kick and make your kitchen smell like the ocean.
Add the potatoes and sausage and cook for 5 minutes. Then add the corn and cook for another 5 minutes. The potatoes will soak up the flavor of the sausage.
Finally, add the shrimp and cook for 3 to 4 minutes or until they turn pink. Don't overcook them or they will become rubbery. Drain the water and dump everything onto a large platter or a table covered with newspaper.
Top with a sprinkle of creole seasoning.
Serve with melted butter, lemon wedges, cocktail sauce, and hot sauce.
There you have it: a low country boil you can make whenever you crave seafood. It's perfect for feeding a crowd or just yourself. Just don't forget to wear a bib and have plenty of napkins handy.
Enjoy!
