Salmon Poké Bowl
Ingredients
Sushi rice
Cucumber, diced
Radish, sliced
Edemame
Pickled onion
Avocado, cubed
Dried seaweed or seaweed salad
Flying fish roe
Black sesame seeds
Marinade
2lbs sushi grade salmon
3 tbsp ponzu
1 tbsp rice vinegar
1 orange squeezed
Zest of 1 orange
¼ tsp chili oil
½ tbsp sesame seed oil
Directions
Slice the salmon into bite sized pieces. Combine marinade ingredients, add salmon, and let marinate in the fridge for 30 minutes up to a few hours.
Build your poké bowl: start with a bed of sushi rice, add the marinated raw salmon, then add the toppings the way you like it. Drizzle on the extra marinade for more sauce.
