Salmon Poké Bowl

CookinwidKunchi's salmon poke bowl is a Hawaiian dish with Japanese influence. It starts with a bed of sushi rice, then layered with marinated raw salmon, topped with radish, cucumber, avocado, pickled onion, sesame seeds, and fish roe.
 

Ingredients

  • Sushi rice

  • Cucumber, diced

  • Radish, sliced

  • Edemame

  • Pickled onion

  • Avocado, cubed

  • Dried seaweed or seaweed salad

  • Flying fish roe

  • Black sesame seeds

    Marinade

  • 2lbs sushi grade salmon

  • 3 tbsp ponzu

  • 1 tbsp rice vinegar

  • 1 orange squeezed

  • Zest of 1 orange

  • ¼ tsp chili oil

  • ½ tbsp sesame seed oil

 

Directions

  1. Slice the salmon into bite sized pieces. Combine marinade ingredients, add salmon, and let marinate in the fridge for 30 minutes up to a few hours.

  2. Build your poké bowl: start with a bed of sushi rice, add the marinated raw salmon, then add the toppings the way you like it. Drizzle on the extra marinade for more sauce.
