Ingredients
6–8 carrots, peeled and cut in half
2 tbsp olive oil
2 cloves garlic, minced (or 1 tsp garlic powder)
1 tsp dried parsley
½ tsp paprika
½ tsp cumin
¼ tsp chili powder
Salt to taste
½ cup grated Parmesan cheese
Directions
Peel your carrots and cut them in half lengthwise. If they’re thick, you can also slice them in half widthwise.
In a large bowl, toss the carrots with olive oil, minced garlic, parsley, paprika, cumin, chili powder, and salt until evenly coated. One by one, dip each seasoned carrot into the grated Parmesan cheese, pressing lightly so the cheese sticks.
Place the carrots on a parchment-lined baking sheet. Bake at 425°F for 20 to 25 minutes, or until the carrots are tender and the Parmesan is golden and crisp.
Serve hot as a savory, cheesy side dish!
