Roasted Chicken and Gravy

Roasted Chicken & Gravy
Ingredients
3-4 Chicken Quarters, Skin On
1/4 C. Liquid Butter
1 Small Carrot
1 Onion, Quartered
1 Vegetable Bouillon Cube
2 Stalks of Celery, With The Leaves
1 Head of Garlic
2 tbsps Cornstarch + 2 tbsps Water for a Slurry
1/2 C. Heavy Cream
2 C. Water
Garlic Powder, Onion Powder, Salt, Black Pepper & White Pepper to Taste
Fresh Rosemary & Thyme (For Gravy)
Directions
Preheat your oven to 400 F. Bottom heat.
Season your chicken well with seasonings list and butter. Place into a roasting pan with a rack.
Add your vegetables and wrap your garlic in foil.
Cook for 20-30 minutes.
Remove the chicken from the pan and turn off the stove
Add the chicken drippings and roasted vegetables to a pot.
Add your vegetable bouillon cube and water and boil for 20 minutes. While that’s boiling place your cooked chicken back into the roasting pan and let it sit in the oven in the residual heat to keep warm.
Once boiled, strain through a mesh strainer.
In the pot with the remaining strained liquid, add your cornstarch slurry and heavy cream. Cook on low on your eye until desired thickness.
Serve over your roasted chicken and enjoy!
