Ripe Plantain Fritters

 

Ingredients

  • 2 Over ripe plantains

  • ½ cup sugar

  • 1 tsp vanilla extract

  • A pinch of Nutmeg

  • A pinch of cinnamon

  • ⅔ cups All Purpose flour

 

Directions

  1. In a bowl, mash plantain and sugar together. The more you mash the lighter the result will be.

  2. Add all the other ingredients and get a thick batter consistency.

  3. Heat oil in pan to shallow fry.

  4. One large serving spoon equal 1 fritter.

  5. Drop directly into hot oil and fry until golden brown.
