Puerco en es Jugo

 

Ingredients

  • 2 pork chops

  • 6 bacon slices, chopped

  • 1 bunch green onions

  • 1 Tbsp EVOO

  • Green Enchilada Sauce

  • 1 can pinto beans

  • 1 Tbsp chopped cilantro

  • ½ cup mozzarella cheese

  • 1 cup chicken stock

  • Salt, pepper, garlic powder & onion powder

 

Directions

  1. Add 1 Tbsp EVOO to a skillet. Once heated, add the chopped bacon and fry in EVOO in skillet. Remove bacon and set in a bowl.

  2. Add green onions to the frying pan. Remove onions from fat and place with bacon after they are browned.

  3. Add pork chops to the pan. Season to taste with salt, pepper, onion powder and garlic powder. Cook and flip pork chops, browning them on both sides.

  4. Once cooked, add bacon, onions, pinto beans and green sauce to pan, cover with lid and simmer for 20 minutes.

  5. Top with cheese and cilantro. Serve with rice or tortillas
