Peanut Butter Blossoms

Red Wagon Bakery's cookies are made with a peanut butter sugar cookie dough, then made into blossoms with Hershey's kisses
 

Ingredients

  • 10 tbs butter, softened

  • ⅔ cup brown sugar, packed

  • ¼ cup granulated sugar

  • ½ cup creamy peanut butter

  • 1 large egg, room temp

  • ¾ tsp vanilla

  • 1½ cup flour

  • 1 tbs cornstarch

  • ¾ tsp baking soda

    Rolling:

  • ¼ cup sugar

  • 24 Hershey kisses

 

Directions

  1. Preheat oven to 375 degrees and line cookie sheets with parchment paper.

  2. In a stand mixer, combine butter and sugars and mix until fluffy. Add in peanut butter and fully combine.

    Add eggs and vanilla and mix.

  3. In a separate bowl, combine flour, baking soda, and cornstarch into a bowl and whisk. Slowly incorporate dry ingredients into wet ingredients and fully combine.

  4. Pour the extra sugar into a bowl for rolling.

    Using a 1-inch cookie scoop, form the dough into a ball and roll in the sugar.

  5. Bake at 375 degrees for 8 minutes or until fully baked through. Allow to rest for about 30 seconds before placing the Hershey kiss on top. Allow cooling time before eating to ensure Hershey kiss is no longer melted.
