Peanut Butter Snickerdoodles

Red Wagon Bakery is back with another made from scratch sweet treat! Sugar cookie dough meets peanut butter, then is rolled in cinnamon sugar for these peanut butter snickerdoodle recipe
 

Ingredients

  • 1 cup butter

  • ½ cup of creamy peanut butter

  • 1 cup granulated sugar

  • ½ cup light brown sugar (packed)

  • 1 large egg plus 1 egg yolks

  • ½ tsp vanilla

  • 3 cups all purpose flour

  • 2 tsp cream of tartar

  • 1 tsp baking soda

    For rolling:

  • ½ cup sugar

  • 1 tbs cinnamon

 

Directions

  1. Preheat oven to 350 degrees and line cookie sheets with parchment paper.

  2. In a stand mixer, combine butter, peanut butter and sugars on medium low until light and fluffy. Add egg, yolk and vanilla and combine.

  3. In a seperate bowl, combine flour, baking soda and cream of tartar and mix whisk together.

  4. Add dry ingredients to wet in seperate parts, half the first time and the remaining the second and mix until well combined.

  5. In a seperate bowl, combine sugar and cinnamon for rolling, and with a 1 inch cookie scoop, scoop dough and roll into a ball. Then, take the ball of dough and roll it into the cinnamon sugar mixture.

  6. Place on cookie sheet and bake at 350 for 8 to 10 minutes.

    Allow a 10 minute cool time and then enjoy!
