Pea Purée with Fresh Mint

 

Ingredients

  • 2 cups fresh or frozen peas

  • ¼ cup fresh mint leaves, chopped

  • 2 tbsp unsalted butter (or olive oil)

  • ¼ cup heavy cream (or vegetable broth for a lighter version)

  • Salt, to taste

  • Black pepper, to taste

  • 1 clove garlic (optional, for extra flavor)

  • 1 tbsp lemon juice (optional, for brightness)

 

Directions

  1. Bring a pot of salted water to a boil. Add the peas and cook for 2–3 minutes, or until tender. If using frozen peas, blanch them for about 1 minute.

  2. Drain the peas and immediately transfer them to a bowl of ice water to preserve their bright green color. Drain again after 1–2 minutes.

  3. In a blender or food processor, combine the peas, chopped mint, butter (or olive oil), and heavy cream (or broth). If using garlic, add it now.

  4. Blend until smooth, adding more liquid if needed to reach your desired consistency.

  5. Season with salt, black pepper, and lemon juice (if using). Blend again briefly to incorporate.

  6. Serve warm or at room temperature as a side dish, spread, or accompaniment to meats, fish, or roasted vegetables.
