Oven Fried Mayonnaise Coated Chicken Leg Quarters

This recipe delivers a unique twist on a classic favorite. By coating the chicken leg quarters in mayonnaise before baking, you’ll achieve a wonderfully juicy inside and a golden crispy exterior.

 

Ingredients

  • 4 chicken leg quarters

  • 1 cup mayonnaise

  • 2 cups all-purpose flour

  • 1 tablespoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt

  • Cooking spray or vegetable oil

 

Directions

  1. Rinse the chicken leg quarters and pat them dry.

  2. Preheat your oven to 425°F (220°C). Meanwhile, in a separate bowl, mix together the flour, paprika, garlic powder, onion powder, black pepper, and salt.

  3. Coat each chicken leg quarter with a thin layer of mayonnaise.

  4. Roll each mayonnaise-coated chicken piece in the flour mixture, making sure they’re fully covered.

  5. Place the chicken pieces on a baking sheet, skin side up. Lightly spray or brush each piece with cooking spray or oil.

  6. Bake in the preheated oven for about 50-60 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C) when checked with a meat thermometer.

  7. Remove the chicken from the oven and let it rest for a few minutes before serving. Enjoy!
