Michelle's Enchiladas
Ingredients
3 chicken breasts
1 tsp fajita seasoning
3 Tbsp olive oil
Salt and pepper to taste
7 large flour tortillas
6 oz cream cheese
1/2 cup prepared queso (I used queso blanco)
1 tsp cumin
12 oz mild salsa Verde
1/2 cup sour cream
8 oz shredded Mexican cheese
Directions
Preheat oven to 350°F. Cover the chicken with oil and fajita seasoning and bake for 35-40 min or 165°F internal temp and let rest a few minutes
Combine 4 oz cream cheese, prepared queso, and cumin. Chop the chicken and add cheese mixture to it.
Mix together the Verde salsa, sour cream, and 2 oz cream cheese. Pour 1/2 cup of this mixture at the bottom of a 9×13 baking dish.
Fill each of the tortillas with an even amount of chicken filling, roll the tortillas, and place in a baking dish seam side down.
Top the tortilla rolls with the rest of the salsa mixture and top with Mexican cheese.
Bake at 350 for another 25-30 min or until cheese is golden brown.
