Mary’s Asian Chicken Salad

 

Ingredients

  • 1 lb chicken breast, seasoned, cooked, in bite sized pieces

  • 16 oz coleslaw

  • 2 bunches of green onions, chopped

  • 1 cup of shredded almonds

  • 1 cup sunflower seeds

  • 2 packages of Ramen beef noodles

  • ¾ cup oil

  • ⅓ cup red wine vinegar,

  • ½ cup sugar

 

Directions

  1. In a large bowl, combine the coleslaw with the chicken and green onions. Crush the Ramen noodles into the bowl, reserving the seasoning pack. Add sunflower seeds and almonds.

  2. In a separate bowl, combine the oil, vinegar, sugar, and beef seasoning. Toss everything in the dressing right before serving.

    Tip: If preparing ahead of time, keep the seeds/noodles in a separate container, chicken in its own container, and dressing separately and toss everything right before serving
