Mama Tee's Smothered Pork Chops
Smothered Pork Chops are a classic dish with seared pork chops with a seasoned pan gravy with onions. It’s perfect for a weeknight meal and a special occasion! Serve with roasted brussels sprouts and mashed potatoes
Ingredients
4 bone-in or boneless pork chops
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
2 tablespoons olive oil
2 tablespoons unsalted butter
1 small onion, sliced
2 cloves garlic, minced
1 cup chicken broth
½ cup heavy cream
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme (or ½ teaspoon fresh)
Directions
Season the Pork Chops: Pat the pork chops dry and season both sides with salt, pepper, paprika, garlic powder, and onion powder.
Sear the Pork Chops: Heat olive oil in a large skillet over medium-high heat. Sear the chops for 3–4 minutes per side until golden brown. Remove and set aside.
Make the Gravy: In the same skillet, melt butter and sauté the onions until soft. Add garlic and cook for 30 seconds. Stir in chicken broth, scraping up any browned bits. Add heavy cream, Worcestershire sauce, and thyme. Simmer for 3 minutes.
Smother the Pork Chops: Return the pork chops to the skillet, spoon the gravy over them, and let simmer for 10–15 minutes, until the chops are tender and cooked through (internal temp 145°F).
Serve: Spoon extra gravy over the chops and serve with mashed potatoes or rice.
