Mash
1 can of peeled potatoes (go ahead and make your own homemade mash this is just what I did on the live to save time)
1-2 Tbsp of butter (I used 2 but make good choices people)
1/4 cup of heavy cream
1-2 Tbsp of sour cream (again I used 2 but do you)
Season to taste with: salt, white pepper, garlic powder, and a pinch of onion powder
Mix until your desired consistency
Chicken:
2 boneless, skinless chicken thighs cut into small pieces
Season chicken with: Lawry’s, white pepper, paprika, garlic powder and onion powder
Wet mix: 1 cup of milk, 1 Tbsp of white vinegar & 1 Tbsp mayo
Dry batter: 1/2 cup cornstarch 1/2 cup of flour and the same seasonings used on chicken or whatever seasonings you prefer
Now add the chicken into the wet mix and let it marinate in there while you prepare the oil for frying
Next add chicken to the dry batter and shake off the excess before adding to your HOT oil.
While the chicken is frying on about medium heat go ahead and start on your gravy. When the chicken is finished set aside on a cooling rack so it does not become soggy
Gravy: I just followed the package for the brown gravy 🙂
Corn: I literally used frozen corn and microwaved it based on the package instructions but feel free to make everything homemade 🙂
To assemble your dish start by adding the mash to a bowl and then topping it with the corn first, chicken second and sprinkle some cheese on top. I microwaved mine to make sure the cheese was nice and melted.
Then you just top it with as much gravy as your heart desires (and mine desires A LOT) Be sure to take a pic for the gram first then dig in and enjoy!
