Italian Cocoa Fruit & Nut Cookies

This is an older Italian Christmas cookie. It’s a large batch but can be halved. I love the spice and texture and eat them both as a snack mid-morning or after dinner. The magic happens after you glaze them. They go great with tea or coffee.  One hint; without the glaze they are good but its the combination of the two parts that make this one of my annual cookies to make

Italian Cocoa Fruit & Nut Cookies

Ingredients (Full Batch)

  • 12 eggs

  • 1 1/2 cup sugar

  • 1 1/2 c oil

  • 5 tbsp baking powder

  • 1/2 tap salt

  • 3 heaping tbsp cocoa

  • 1/2 lb chopped nuts (2 cups)

  •  1/2 lb mixed  chopped fruit (2 cups)

  • 1 tsp cinnamon powder

  • 1 Tsp clove

  • 1 tsp nutmeg

  • 1 tsp vanilla

  • 9 cups of flour

  • Optional 1lb raisins

Preparation

  1. Beat eggs, sugar, and oil, In a large bowl, until creamy in a large bowl

  2. Mix dry ingredients with liquid ingredients; add nuts, fruits, and raisins (if used)

  3. This is a very thick batter; you will have to use your hands. 

  4.  Drop spoonfuls on a parchment-covered pan

  5. Bake at 375 degrees for 10 to 14 minutes

 

Once cooled, dip in a thin icing of confectioners sugar, vanilla, and milk. Let dry
